Protein packed cookies

This morning I just wanted something super quick and easy that would give me a burst of protein. These are so simple, vegan, gluten free and raw! All of that and even I was totally surprised how moreish they are!

1.5 cups soy flour

0.75 cups psyllium husks

0.5 cups buckwheat flour

o.5 cups vegan protein powder (optional)

2 tblspns ground cinnamon

2 tblspns ground cloves

2 tblspns coconut oil

0.5 cups approx. water

Mix all the dry ingredients together. Slowly add water until the mixture creates a firm but slightly sticky dough. Using your fingers, roll teaspoon sized balls into disks. Then ice each cookie with your choice to icing (I used coloured fondant but for a lower GI version you could very easily mix vegan margarine with stevia and either cocoa or vanilla essence to create a sugar free and very yummy topping). Put them in the fridge or freezer to store.

Great for snacking on  the run or to sit down with a cup of tea and savour!
